In honor of National Popcorn Day, I’m reposting one of my favorite popcorn treats!

i love popcorn. it’s probably my favorite snack. i also love peanut butter. combining two things i love? winning. :)

ingredients:

• 1/4 cup popcorn kernels
• Vegetable oil
• Fine salt
• 1/2 cup honey
• 1/3 cup sugar
• 1/2 cup peanut butter (should be free of added sugar)
• 1/2 teaspoon vanilla

my add ins (optional)

• chocolate chips
• marshmallows
• honey roasted peanuts

directions:

you can either pop your own corn, or in a pinch, use a bag of microwaved popcorn. let the popcorn cool in a big bowl, and try to get all of the unpopped kernels out of there! lightly salt the popcorn to taste (unless you’re using bagged microwave popcorn, that’s already pretty salty).throw in whatever add ins you want into the bowl when the popcorn is cooled.

mix the honey and sugar in a small saucepan and bring to a boil. let it simmer for a few minutes, then remove from heat and add in the peanut butter. stir it all up until the peanut butter is melted, and add in the vanilla. stir it up some more.

immediately pour the peanut butter caramel over the popcorn and stir with a wooden spoon until its all coated. it will be softer than regular caramel popcorn, but even more delicious!

by the way, i haven’t posted much in the past few days because i haven’t been taking pictures. my wonderful camera died a couple weeks ago, and it’s been getting repaired. i’ve been using my old point and shoot, but it’s just so not the same. i finally got the good one back, so i’ll be back to business soon!
